Tips for Baking with Almond Flour

Our almond and cashew flours can be swapped at a 1:1 with regular flour, especially when dietary concerns and nutrition are the main goal. Almond flour typically has a higher moisture content than wheat flour, so you may have to either reduce the amount of liquid slightly, or add more almond flour as you go along and find that your batter is too wet. The natural moisture content is great for baked goods, but may require the finished product to be stored in the freezer or fridge to prevent spoilage. It is sometimes suggested that almond flour be used along with gluten free or regular flour for more traditional recipes. Keep in mind that you want to make sure your recipes have good binders such as flax and chia eggs or nut butter, especially when using almond or cashew flour exclusively.
Before choosing which flour to use, think about what flavor profile your recipe requires. Almond flours tend to pair well with amaretto type flavors and cashew flour gives more buttery notes. Almond and cashew flour work well in both sweet and savory recipes alike. Some ideas include: pancakes, breads, muffins, cookies, cakes, thickener or breadcrumb coating. Since nut flours may brown before a regular flour would, keep an eye on it and cover with foil as necessary when baking in the oven.
