Cashew Bliss Maple Walnut Cookies

Vegan – gluten free –REFINED SUGAR FREE
Yield: 24 cookies
Time: 15 minutes prep; 15 minute bake time

Ingredients

2 ½ cups oat flour
1 tablespoon vanilla extract
1 teaspoon Himalayan pink salt
½ cup maple sugar*
¾ cup maple syrup
¾ cup walnut pieces
1 jar Cashew Bliss Manna Butter
1 teaspoon baking powder

*Can substitute coconut sugar or other granulated sugar of choice

Instructions

  1. Preheat the oven to 350 F
  2. In mixer or bowl, combine oat flour, maple sugar, Himalayan pink salt, and baking powder and mix well
  3. In a separate bowl, add cashew butter, maple syrup, and vanilla extract and stir until well combined and a smooth consistency
  4. Combine wet ingredient slowly into mixer or other bowl and mix until a dough is formed
  5. Add walnut pieces and mix until well combined
  6. Line a baking tray with parchment paper and roll dough into preferred sized balls
  7. Gently press down on the dough balls with a spoon or fork
  8. Bake for 10-15 minutes, depending on the size of the cookies until slightly browned
  9. Enjoy!
